On Sunday, September 7, 2014, Westword will host its twentieth annual celebration of the Denver dining scene, DISH, in Sculpture Park at the Denver Performing Arts Complex, where many of the favorite restaurants of Cafe Society writers and readers will be serving delectable dishes. Like Adelitas Cocina y Cantina, for example, which is eschewing the taco template for something a little fancier.

This Mexican restaurant on South Broadway is famous for its Taco Tuesday special, but owner Brian Rossi will show a different side of his cantina at DISH. “We choose to do this versus our normal taco to show people we are much more than your typical taco shop,” Rossi says.
To that end, Adelita’s is serving a ceviche with tilapia and shrimp; like much of the restaurant’s cuisine, it’s a classic recipe from the Michoacán region of Mexico. That’s where chef Silvia Ayala and her family hail from, and that’s where many of her closely-guarded recipes originate.
