Late last week, I got word from Duy Pham that his new restaurant — in Pueblo, of all places — is just about done. “Buildout, total remodel,” he told me. “I just spent $5,000 on an awning, dude!”

He’s hoping to roll out the red carpet at Restaurant Fifteen Twenty-One by the end of September. And even though he’s moved around a bit in the past (to put it mildly), Pham insists that this is where he’s going to be “for the next ten years, at least.” — Jason Sheehan
