Last month, we reported that Gaia Bistro had obtained a liquor license and was working on adding dinner hours to augment its very popular breakfast and lunch. Today, restaurant co-owner Jon Edwards confirms that as soon as his staff is fully trained, the restaurant will be open for evening dining.

Edwards says he hopes that Gaia will offer the dinner menu starting January 15 — barely meeting the initial prediction of the second week in January. Once those hours are confirmed, dinner will be served from 5 p.m. to 9 p.m. Wednesday through Saturday, with a wine dinner on one Tuesday every month.
