We couldn’t resist posting a graphic close-up of one of our favorite dishes from Chad Clevenger’s Porker Cart.
This dish starts with a bed of cold soba noodles bathed in a light soy vinaigrette and tossed with chunks of juicy mango, crisp bell peppers, spicy scallions and fresh cilantro. And resting on that delightful little nest are sizeable chunks of quivering, decadent soy-glazed pork belly, slow-roasted chunks of tender meat with ample fat (because that’s where the flavor lives) that melt in the mouth.
Yes, it tastes as good as it looks. Better, even.
Thankfully, the Porker Cart joined the ranks of Civic Center Eats Encore, so we’ll be able to get the goods there today from 11 a.m. until 2 p.m.
