After several months of eating everything from headcheese to lamb vindaloo (blame it on Best of Denver, people), I took a much-needed break from digesting animals to focus instead on stuffing my gullet with vegetables, and while this restaurant does serve meat dishes, it does a bang-up job of saluting plants. My body thanks you.
