Hosea Rosenberg is a pretty big name in the area, ever since he won season five of Bravo’s Top Chef. That’s why residents who may not otherwise follow the Front Range restaurant scene are still interested in Rosenberg’s soon-to-open Blackbelly Market, a restaurant, market and butcher shop that will focus on meats from his own Blackbelly Farms. No stranger to promotion, Rosenberg is giving his fans a sneak preview by serving breakfast in the Blackbelly parking lot from his food truck, which he calls “Darth Tater,” starting Monday at 7 a.m. until the food runs out each morning.

Rosenberg says the food-truck breakfast menu will be “a simple, cut-down version of our market breakfast menu.” Options will include breakfast burritos, coffee and changing daily specialty items fresh from the farm.
“I grew up in New Mexico, and green chile is our life force,” he says. “So green chile breakfast burritos will be on the truck starting next week for sure.” Choices will include vegetarian and house-made chorizo, with potato, egg, and cheese — and lots of fresh-roasted green chile.
“We will also do a yogurt, granola and fresh fruit cup to start,” adds the chef. “We plan to add pancakes, egg sandwiches, frittatas, hash browns, and other goodies. There will be orange juice and fresh=brewed coffee from the start, as well. As the crowds build, so will the offerings!”
Until the doors swing open at the market and restaurant some time in October , we’ll have to be content with a quick breakfast from this top chef.
