Mellow Mushroom outlets are popping up like, well, mushrooms. Another outlet of the Georgia-based pizza chain is slated to open next June in the Tabor Center, joining a line-up that already includes the Cheesecake Factory, Green Fine Salad, Corner Bakery and Ling & Louie’s.
There are over a hundred Mellow Mushroom locations across the country, most of them in the southeast. The downtown Denver restaurant will seat 220, according to Callahan Capital Partners, which announced the deal. “We are very excited to be bringing dynamic concepts such as the Mellow Mushroom and the Tilted Kilt to Tabor Center, as well as Colorado Athletic Club, all highly desirable amenities for our tenants and downtown Denver,” said Steve Budorick, executive VP of CCP. “Despite the challenging economic environment, Tabor Center’s retail mix and premier location continues to attract strong interest from exciting retail concepts.”
