Highlands Ranch is home to the eighth Modmarket in Colorado. The new location will open at 8 a.m. today across the street from the Highlands Ranch Towne Center. During today’s grand opening festivities, the store will give $25 gift certificates to the first fifty customers in line — and there will be more free food and other prizes offered throughout the day.

The first Modmarket opened in 2009 in Boulder, a town that seemed ideally suited for its seasonal ingredients and farm-to-table philosophy set off by a sleek, fast-casual setting. In the three years after that, owners Rob McColgan and Anthony Pigliacampo opened three more stores in metro locations just as responsive to the concept: at 14630 West Colfax Avenue in Lakewood, 1000 South Colorado Boulevard in Glendale and 8575 East Arapahoe Road in Greenwood Village.

Over the last year, the partners added three more stores: in Longmont, Englewood and downtown Denver, where in February they opened a restaurant on the 16th Street Mall. And now the eighth will be in Highlands Ranch.

“The Highlands Ranch community is made up of active, health-conscious families and professionals who value the same things we do — delicious, affordable, healthy food served in a nice environment,” explains Anthony Pigliacampo, Modmarket co-founder. “They have graciously welcomed us and seem just as excited as we are to be serving their neighborhood.”
