Restaurateurs targeted Denver last year as a city they clearly thought was short on one of the major food groups: pizza. Along with new locations for local chains like Modern Market (formerly ModMarket) and Parry’s Pizzeria & Bar, several other national chains invaded from other states, including Uncle Maddio’s Pizza Joint (Georgia), Hungry Howie’s Pizza (Michigan), Crushed Red Urban Bake & Chop Shop (Missouri), PizzaRev (California) and Dion’s Pizza (New Mexico).
The pizza push doesn’t seem to be slowing down; we spotted an outpost of Brixx Wood Fired Pizza going in at 8351 East Northfield Boulevard in the Northfield Stapleton development. Brixx arrives from Charlotte, North Carolina, specializing in brick-oven pizza and housemade focaccia. An exact date hasn’t been set for the opening, but the company’s website states “early 2016,” with hours from 11 a.m. to 1 a.m. Mondat through Saturday (11 p.m. Sundays). The new pizzeria will also have a liquor license to serve beer and wine.
