Oinks! advertised itself as “American style BBQ,” but its ribs smacked of St. Louis.

And that’s where you may have to go to get ribs as authentic as those served at Oinks, not to mention barbecued tofu. Because this East Colfax Avenue barbecue joint closed up after the end of business yesterday, after a round of deals to reward its mourning regulars.

“We’re dedicated to the pursuit of the American dream: BBQ, good times and sustainable entrepreneurship,” Bobbi Capps, who opened the place with her husband, Mason, in the spring of 2010, had told Lori Midson. “This is going to be American-style barbecue. We cherry-picked from all the good styles — North Carolina, Texas, St. Louis and Kansas City — and gave them our own spin.”

For another barbecue place that pulls from styles around the country and gives them a Colorado spin, read Laura Shunk’s recent review of Country Time BBQ.
