Bites of China opened recently in a tidy Aurora shopping center on East Alameda Avenue, where residents are no strangers to an array of ethnic eating options. Photographer Danielle Lirette stopped in to see what was cooking, and found that what looks like a standard counter-service Chinese eatery has a few surprises on its extensive menu.

Bites of China offers the usual array of fast-casual Chinese-American dishes — think egg foo young, Kung Pao chicken, egg rolls and wontons. But there are also a few house specials from the Xinjiang region — like Ding Ding noodles and cumin lamb kebobs — as well as less frequently seen dishes from other regions of China, including scallion oil noodles, Old Beijing minced pork and fish-flavored shredded pork. Dishes with names like the Cowboy Prince and Cowboy Princess promise “fried pies,” also done Xinjiang-style.
