When Mayor Michael Hancock’s office announced that it would be sending green chile from the Original Chubby’s, as well as other local Mexican restaurants, to the mayor of Seattle to pay off a Super Bowl bet, we were concerned: Did the mayor mean the original Chubby’s, the restaurant on West 38th Avenue that Stella Cordova took over in 1968, or the Original Chubby’s, a homegrown chain run by one of Stella’s grandsons who trademarked the name?
Turns out that Hancock’s staff knows its Chubby’s: The green chile was from Stella Cordova’s original Chubby’s. But to avoid any future confusion, we sent photographer Ursula Romaine over to West 38th to provide this pictorial refresher course.
