Prost Brewing beers will be available in bars before its taproom opens

Prost Brewing has pushed back its opening to late July or early August, even though the German-themed taproom plans to begin making beer next week. Head brewer Bill Eye says that on June 18 he’ll start a full 72.5-barrel batch of Weissbier, a lager that will be kegged and served on tap in July at several local beer-themed restaurants, including Falling Rock, Freshcraft, Rackhouse Pub and Ale House at Amato’s. Eye plans to brew two batches of the Weissbier and one of his Dunkel before Prost opens; each lager takes four to six weeks to make.

In the meantime, construction continues in the two-story brewery and taphouse, which features an enormous copper brewing system that Eye and the owners of Prost bought from a brewery in Germany and shipped to the United States via boat.

When it opens, Prost will feature a gravel-lined beer garden with long wooden tables, German memorabilia and German-style beers on tap, including the Weiss, the Dunkel and a Pilsner. The brewery will never have more than three or four styles on tap at a time, in addition to a guest beer. It will also serve some traditional accoutrements, including sweetened lemon syrups, apple juice and colas.

Since Prost’s brewhouse is so large — most new breweries start with three- to fifteen-barrel systems — it will also contract-brew for other breweries.
