According to the Chicago-based company’s website, Protein Bar’s focus is “on serving healthy, flavorful food in a hip, trendy environment quickly and efficiently so you can get back to your day.” To do that, the outposts offer healthier options of on-the-go favorites. The Bar-rito, for example, replaces rice with quinoa and a tortilla with a wheat wrap. The bowls are a mix of veggies, quinoa and protein; Protein Bar also offers blended drinks, salads and breakfast options.

The first Protein Bar in Colorado opened last week in Boulder’s 29th Street project; this spring, one will open in One Union Station, the big new building just southwest of the renovated station; a second location will open soon at 1390 South Colorado Boulevard. The company hasjob openings listed for all three locations.
