While you wait for Root Down to open its highly anticipated location at Denver International Airport, you can enjoy the soaring achievement of a raw-food meal there. Every first Tuesday of the month, Raw Food Certified Chef Daniel Asher offers a special four-course, entirely raw dinner.

Here’s the April menu:

Four Course Raw Vegan Dinner

Vichyssoise
Zucchini, Lemon & Mint

“Beet Down”
Quick Pickled Beets, Cashew Chèvre & Watercress

“Royale with Cheese”
Sunflower Burger, Pine Nut Tarragon Cheddar & Jicama Fries

Pot de Crème
Chocolate, French Lavender & Ginger Syrup

The raw-food meal, which costs $39, is served from 6 to 10 p.m. (the regular menu is available, too). Reservations are recommended; call 303-993-4200.
