In January, there’s often a shake-out in the dining scene. But while twenty new restaurants opened in metro Denver last month, including Corner House with chef Matt Selby at the helm, there were relatively few closings. And two longtime fixtures on the scene — Jax Fish House in LoDo and Parisi — managed to close for remodeling jobs after the start of the new year and reopen before the end of January.
