Smiling Moose Deli, which got its start in the Vail Valley in 2003, recently opened four new locations in Ohio, South Dakota, Montana and North Dakota. But this casual deli chain has not only expanded its geographic range: it’s also expanded its menu with a brand-new dish, the Mo!Mac, a combination of the Moose’s Mighty Mo! and its classic mac-and-cheese.

While Smiling Moose continues to serve wraps, hot and cold sandwiches, soups, home-made lasagna, chopped salads and all-day breakfast choices, the fancy new mac-and-cheese is going strong, with chopped sirloin, crispy bacon, diced tomatoes, green onions, jalapeños and Parmesan cheese all layered on top of the basic dish.
The downtown location started selling the new mac three weeks ago. “It went from the bottom to fifteen to twenty a day, which is pretty substantial,” says general manager Jeff Aprill. “Construction guys love it, but I have seen a lot of ladies loving it, too.”
And the changes won’t end with Mo!Mac. According to Aprill, within the next three months Smiling Moose will add still more items to its menu — but it plans to keep the fresh chocolate chip cookies baked every Wednesday.
Smiling Moose Deli has nine stores in Colorado and thirteen in seven surrounding states.
