Sweet Ginger Asian Bistro & Sushi will open later this month at 2710 East Third Avenue, in the subterranean space that was formerly home to Plush. “We want to try and open before Thanksgiving, and we should have our liquor license by next week,” says owner Julie He, a restaurant veteran who previously owned Jason’s Thai Asian Bistro at 2022 South University Boulevard.
“It’ll be fusion, with a little bit of Thai, a little bit of Chinese and a little bit of sushi,” explains He, who says the menu’s emphasis will be on Thai cuisine. “I think Cherry Creek needs a Thai restaurant and that the neighborhood will be happy that we’re here,” she says, adding that the board will focus on”Americanized Thai” food. “We’re doing that kind of food, because that’s what’s popular here,” she insists.
But He also promises that if you want the real deal, the kitchen will oblige with advance notice. And if for some reason it won’t, there’s always Lotus of Siam.
