The chefs from Vesta Dipping Grill, Steubens, Linger, Root Down, 1515, Coohills, Duo and Olivea will take the stage at GrowHaus, 4751 York Street, for a unique dining experience tonight: “The Feast of the Hunters and Gatherers.”
The Harvest Week meal will be crafted with foraged ingredients from each establishment; here’s a look at the dishes that should result:

1st course: hunted
Colorado Goat Tagine
local quinoa & millet, seasonal vegetables, Ras al Hanout braising sauce
2nd course: gathered
raw fall squash salad
Butternut squash, sage pesto, jumping good goat feta, pecans
3rd course:foraged
Slow cooked fruition farms lamb
Roasted fall root vegetables, garlic braised Tuscan kale
Colorado apple butter and scallion crema
Dessert:
Avalanche Goat Cheese Gelato, Almond Cone, Basil Sphere, Colorado Honey Glass, Liquid Nitrogen
