Opus, at 2575 West Main Street in Littleton, has teamed up with the Infinite Monkey Theorem to produce a different sort of wine dinner tonight: The menu has been constructed to mirror common characteristics of many wines.

Here’s a taste of the courses:

Reception: Artisanal cheeses, smoked salmon asparagus roulades, foie gras mousse and spiced tuna tamarind “forks” paired with Infinite Monkey Theorem’s 2008 chardonnay.

Earth course: Kobe beef short rib with parsnip puree, truffle and king oyster mushroom paired with Infinite Monkey Theorem’s 2008 Malbec.

Oak course: Smoke-seared sea scallops with oyster bacon risotto and fennel paired with Infinite Monkey Theorem’s 2009 sauvignon blanc/semillion.

Spice course: Near East spiced duck breast with savoy cabbage, duck confit lentils and syrah blackberry jus paired with Infinite Monkey Theorem’s 2008 Syrah.

Fruit course: Chocolate cherry pie with vanilla bean ice cream and marshmallow topping.
