US Thai Cafe is one of our favorite Thai restaurants in Denver; the Edgewater spot landed our Best Thai Hot award in the Best of Denver 2011, and I just sang the praises of its fiery curries in a Second Helping review. So we were thrilled to learn that Ma Vue, the Laotian owner of US Thai, is opening a second eatery.
This one, called Chef Vue, will offer a scaled-back version of the US Thai menu — in a fast-casual model.
The lineup at Chef Vue will include such Thai favorites as fried rice, noodles and curries — a standout at the original US Thai — but in streamlined versions for fast service.
The mall-front spot is slated to debut next week in the Town Center at Aurora, after a few last-minute problems pushed back its planned opening from this week.
