Sometimes you come across a dish in which every component is so pitch-perfect, every bite so enticing that you just want it to go on forever. Z Cuisine's smoked duck and gnocchi is just such a composition of elements — and fittingly, it's served in a long kayak of a dish that extends the pleasure across more than a foot of stark white dinnerware. 

The two main components are thin-sliced curls of pink duck magret (breast meat from a duck raised to also produce foie gras) lightly, almost intangibly, smoked, and airy pillows of gnocchi enriched with duck egg. Milky pecorino shavings intertwine with the duck to form a sinuous ribbon over a chunky, verdant pesto made with firm, fresh fava beans from Longmont's Pachamama Farm. Garlicky chimichurri oil marries all of the ingredients in an earthy, pungent bath — and flecks of espelette pepper add just a touch of warmth.

Herbs, potato, cheese and duck form a continuous procession of flavor from one end of the dish to the other — alternately standing out as distinct building blocks and melding into a cohesive unit. With this dish, Z Cuisine proves that it can step outside of the French culinary canon with bold Italian flavors — and a hint of Argentinian inspiration — enriched with the abundance of local summer produce.
