No. 32: Chicken Gizzards at Catfish King
  Admittedly, chicken gizzards aren’t everyone’s idea of a pleasing appetizer. You don’t want to even think about what part of a chicken the gizzard is (mostly muscle, it’s the organ that helps the chicken grind up food for digestion, in case you were wondering). Still, gizzards can be delicious when properly prepared. And the kitchen at Aurora soul-food specialist Catfish King knows its way around these meaty bites.
First off, Catfish King cooks its gizzards to order, meaning they’re not sitting around under a heat lamp. Instead, they’re fried up and delivered to the table so hot that you can still hear the crispy batter sizzling. The thin, brittle coating sticks to every nugget, ensuring a proper distribution of crunch — and of the peppery seasoning mixed in.
Poorly made gizzards can be as tough as leather, but these are treated with respect, so the texture is pleasantly chewy without becoming a workout. The gizzards combine the flavor of dark-meat chicken with just enough mineral sharpness to remind you that you’re eating offal. One order presents a heaping mound of walnut-brown pieces, easily shareable among three or four friends as a starter before platters of catfish or some of the King’s Southern barbecue.
If gizzards aren’t something you grew up eating, the idea of trying them can be daunting. But once you get past the word (why does it even need two z’s?), Catfish King makes the rest easy. Don’t think: Just order and eat.
