Best Breakfast Sandwich in Colorado? This Spot Leads the List

A local mini-chain makes a breakfast sandwich that's reason to rise and shine.

The Franklin is one of the best breakfast sandwiches in the U.S., representing Colorado in a state-by-state list by Love Food. But fans of the Atomic Cowboy's Denver Biscuit Company, which won the Readers' Choice award for both Best Biscuit and Best Breakfast in Westword's 2025 Best of Denver, already know that their impressively layered biscuits are amazing bookends for sandwiches.

These biscuits make the Franklin, in particular, an excellent and totally satisfying breakfast sandwich, with buttermilk fried chicken, bacon and cheddar cheese, all smothered with either housemade sausage or veggie mushroom gravy (or both!), ideally with a fried egg placed just underneath that top layer. The feast of a sandwich is the size of a large dinner entree, and you'll need a fork and knife to attack it — the Franklin isn't meant to be picked up by hand. It's messy, but damned delicious.

Denver Biscuit Company is part of a three-way gastronomic group started by former CU Buffs football player Drew Shader under the Atomic Cowboy moniker twenty years ago; the original location is at 3237 East Colfax Avenue, although the company now has two other locations in Denver and four more in Colorado — including the spot at the Stanley Marketplace in Aurora that was the only one cited by Love Food. Atomic Cowboy is a simple concept: feed people comfort food while they drink, and then feed their hangovers with more comfort food. At most locations, the three-part chain is open from 8 a.m. to midnight most days, and until 2 a.m. on Fridays and Saturdays.
The early hours start with the Denver Biscuit Company, which serves a variety of gigantic breakfast sandwiches like the Franklin and the Dahlia, featuring a Polidori Sausage patty, apple butter and fried egg covered in maple syrup, as well as the K-Mack, with Korean fried buttermilk chicken, toasted sesame seeds, sesame mayo, pickled daikon radish, shredded cabbage and green onions. The sibling Fat Sully's offers pizza, and then there's Atomic Cowboy's full-service bar and food lineup — including one of the best cheeseburgers in the metro area — that started it all. 
The biscuits are served in the mornings until early afternoon, and overlap with that pizza hits the ovens for lunch. Fat Sully's also offers tasty "Not Pizza" selection that includes chicken tenders, a chicken sando, waffle fries and more. And through it all, there are the Atomic Cowboy offerings.

You can find Denver Biscuit Company at any Atomic Cowboy locations, which include Denver spots on Tennyson and Broadway, as well as in Aurora, Centennial, Golden and Colorado Springs. But the Stanley spot is reserved for just Denver Biscuit Company, and is open from 8 a.m. to 9 p.m. The bar opens at 3 p.m. — when you can cheers the Franklin, the best breakfast sandwich in Colorado.
