Denver Restaurant Is Serving One of the Best Dishes in the U.S.

It's included in a new list from the New York Times of the top 26 things its food writers ate in 2024.

Despite being inexplicably left out of Colorado's most recent edition of the Michelin Guide (one of the many misses from the much-lauded organization), Sắp Sá»­a has continued to rack up other accolades and national attention.

Since opening their non-traditional Vietnamese restaurant at 2550 East Colfax Avenue in the summer of 2023, the culinary creativity of Ni and Anna Nuygen and their talented team has landed Sắp Sá»­a on best-restaurants lineups from Esquire, Bon Appétit and the New York Times â€” as well as our recent Top 100 Restaurants list.

On December 17, the Times released its list of the 26 Best Dishes We Ate Across the U.S. in 2024, and the trúng và trúng at Sắp Sá»­a made the cut.

"The unassuming list of ingredients — soft scrambled egg, brown butter, fish sauce, trout roe, rice — doesn’t necessarily prepare you for the ethereal experience that comes together in the bowl," the Times writes. "The eggs have a fluffed, custardy texture while the base note of brown butter layers in a richness that plays against the funk of the fish sauce and the briny pops of roe. It’s justifiably become one of the most popular dishes on the menu."

In a September 30 Instagram post, Sắp Sá»­a shared more background about the dish, writing, "The humble egg. Three main ingredients. Eggs, fish sauce, jasmine rice. We try not to over-manipulate anything here at sắp sá»­a."

The dish was developed by chef de cuisine Ben Carolan, who is featured in episode one of Chit Chats, a recently launched video series from a team that includes Ni's brother and cousin. It's focused on "exploring creative minds and the chaos of the culinary world."

Carolan also shared a home-cooking version of the recipe with Bon Appétit if you're hungry for a taste — though we recommend visiting to try the original one time (or two, or three times) first.

Sắp Sửa is located at 2550 East Colfax Avenue and is open from 4:30 to 10 p.m. Friday and Saturday and 4:30 to 9 p.m. Sunday, Monday, Wednesday and Thursday. For more information, visit sapsua.com.
