Eat Up: Denver Airport Adding Eight More Local Restaurant Outposts

With Uncle, the Bindery and others set to debut at Denver International Airport, travelers can anticipate more than their final destination.

The dining scene is taking off at Denver International Airport, with Food & Wine’s 2025 Global Tastemakers Awards naming it among the country’s top ten airports for food and drink. Its round-up cited several recent openings including Elway’s Taproom & Grill and ChoLon Modern Asian, which were among the 29 concessionaires that launched last year.

More than thirty eateries are slated to debut in 2025, several of which are Denver-based concepts. The first wave arrived at Concourse A late last month with the grand openings of Tocabe: An American Indian Eatery, cafe and bakery D Bar, The Bagel Deli and speakeasy-inspired cocktail lounge Williams & Graham.

Concourse A

The Bindery
This eatery, market and bakery from chef Linda Hampsten Fox will soon debut a second location within the West Marketplace of Concourse A, near gates 24 and 26. The Bindery works closely with local farmers and producers, handcrafting seasonal menus with bold global flavors and signature dishes including spicy lamb pappardelle and smoked rabbit pecan pie. Dining here is a luxurious way to spend a layover, especially with a cocktail in hand.

Fat Sully’s
Combat airport stress with comfort food from Fat Sully’s, an Atomic Cowboy concept serving build-your-own New York-style slices and one of the best burgers in Denver. Entrees pair well with loaded garlic knots, waffle fries and other sides, plus a couple of pints of craft beer. This will be the homegrown chain’s eighth in-state location, set to open inside Concourse A.

Maria Empanada
Since its debut in 2011, Maria Empanada has grown to four locations; its most recent outpost on East Colfax Avenue opened earlier this year. Concourse A will house its next eatery, which will neighbor the Bindery near gate 24. Stop by for its Argentinean empanadas, which come in an array of flavors including chipotle-spiced chicken and spinach with béchamel cream, along with housemade sandwiches and pastries.

Uncle
Chef Tommy Lee, founder of Uncle and sister concept Hop Alley, will add another restaurant to his portfolio with the opening of this airport outpost. Soon, flavorful ramen bowls topped with crispy duck confit, Thai khao soi, pork belly bao buns and other Uncle signatures will be served from Concourse A, adding to the West Marketplace selection near gate 24.

Concourse B

Denver Street Eats
In 2018, hospitality company Delaware North launched Denver Central Market near gate A48 and soon, alongside other partners, it will debut Denver Street Eats within Concourse B. The rotating concept is inspired by the RiNo Art District and is dedicated to local chefs, who will take the stint on an annual term.

Osteria Marco
Frank Bonanno, co-founder of Denver-based restaurant group Bonanno Concepts, oversees several award-winning eateries, including Mizuna and Larimer Square mainstay Osteria Marco. Known for its handcrafted pizza and Italian classics, the latter will debut its second location within the central mezzanine of Concourse B — just steps from its sister deli concept, Salt & Grinder.

Concourse C

Santo

Founded by Top Chef winner Hosea Rosenberg, this Boulder-based eatery and sister concept to Blackbelly Market will bring award-winning New Mexican fare to Concourse C this summer. Savor burritos smothered in red and green chile, tacos topped with ingredients like roasted achiote chicken and nopalito pico de gallo, as well as margaritas and more.

Woody Creek Bakery & Cafe
Prior to filling a spot near gate 46 in Concourse C, Woody Creek operated cafes on 16th Street Mall, as well as in the DTC and Boulder. Though its city outposts have since shuttered, business at DIA is presumably going well, as another Concourse C counter will soon offer breakfast staples, sandwiches, salads and rotating baked goods.
