The Rebellion tosses out vegetarian and vegan pizza pies

There are no tables inside the Rebellion, 2231 South Broadway, and although the patio offers extensive seating perfect for sunny Colorado days (summer and winter alike), you might not want to wait for clear skies to get your pizza fix.

Understandable. Thankfully, the pizzeria offers delivery (within a certain radius) and, of course, there's always pick-up, which is quick and convenient. This is a don't-miss pizza stop for vegetarians and vegans, because from the beginning, the Rebellion has made a point to carry food fit for herbivores.

The menu has an array of specialty pizzas, plus calzones, hot wings, burgers, salads, sides and sandwiches, and a special section listing vegan options -- including vegan cheese, meatless substitutions, condiments and dressings. These extras make it easy to turn a meat-heavy specialty pizza (like the Chicken BBQ, pictured above) into something more palatable to veggie-centric tastes. The pie is originally made with grilled chicken, onions, bacon, mozzarella and barbecue sauce; we asked for it with Morningstar Farms' "chicken" meat substitute and Lightlife's Smart Bacon, both of which are excellent exchanges in terms of both taste and texture.

Another specialty pizza is the Mediterranean, which comes topped with artichoke hearts, kalamata olives, spinach, sun-dried tomatoes, feta, Parmesan and mozzarella; instead of a red sauce, the Mediterranean comes with a "garlic-infused olive oil wash." No substitutions are needed to make this vegetarian; vegans can lose the feta, Parmesan and mozzarella, subbing them out for Diaya or Follow Your Heart cheese.

In all, the Rebellion offers 22 toppings (not including cheese, dressings or sauces) that are veggie- and vegan-friendly. Meat substitutes include Boca burger (which can also be used on the Rebellion burgers), the aforementioned chicken and bacon, Tofurky Italian sausage, Lightlife pepperoni (yes, really!) and Yves Canadian bacon. Gluten-free pizza crust is also available, and Rebellion pizzas are served with small packets of honey for the crust, a Colorado pizza tradition.
