The “SK” in Denver Central Market’s SK Provisions stands for longtime Denver restaurateur Sean Kelly, and even though he’s operating out of a simple market stall these days, Kelly’s fine-dining experience at Barolo Grill, Aubergine Cafe and Desmond shines through. There’s a deli counter of tasty prepared salads and sides, but the real draw of this spot are the two rotisserie ovens behind the counter. Inside are spits loaded up with glistening whole chickens and crackly porchetta roasts that yield comforting, soul-satisfying, simply prepared plates loaded with roasted veggies and salad alongside the perfectly roasted meat. That meat is also used in an ever-changing roster of more casual fare – burgers, tacos and sandwiches – that will keep you going all day.
