Bakeries are on the rise in Denver and beyond, from the impressive pastries at Poulette in Parker to the sandwiches, pizza and breads at Get Right’s in Wheat Ridge.

Now, a new bakery with some serious culinary chops is set to open next month in Breckenridge. Threefold is the latest project from chef Matt Vawter, owner of Breckenridge restaurants Rootstalk and Radicato and the 2024 James Beard Award winner for Best Chef in the Mountain Region.

Vawter, who’s from Summit County, spent thirteen years working for chef Alex Siedel at the now-closed Fruition and, later, Mercantile at Union Station, before returning to the mountains to strike out on his own in 2020. For this latest project, he’s brought on partners and longtime friends with serious culinary chops of their own.

Sean and Melissa McGaughey own Quail & Condor, a bakery in Healdsburg, California, that was named one of the best bakeries in the country by the New York Times last year, as well as Troubadour Bread & Bistro, which was recognized by Michelin in 2023.

Sean McGaughey and Vawter first worked together at the Cellar in Breckenridge over twenty years ago. The two later reunited as part of Mercantile Dining & Provision’s opening team — Vawter as chef de cuisine and Sean as sous chef, as well as Melissa as head pastry chef — before pursuing their respective ventures.

The name Threefold is an homage to the trio’s partnership along with “the artful technique central to their respective — and now collaborative — crafts,” according to an announcement of the new venture. The bakery will be located in the former Mom’s Baking Company space just off Breckenridge’s Main Street.

When it opens in December, diners can expect pastries, sourdough bread made with Colorado grains, lunch sandwiches and salads, along with an espresso program featuring Huckleberry Roasters, wine and beer.

“I’ve always wanted to open a bakery that could be part of people’s daily lives here in Summit County, a place where locals and visitors alike feel at home,” Vawter says. “Threefold allows us to offer the same quality and care you’d find at Rootstalk and Radicato, but in a more casual, accessible way. Plus, getting to do this with Sean and Melissa makes it even more special.”

“We’ve wanted to establish a deeper connection to Breck for years, and the timing felt perfect,” Melissa McGaughey adds. “Matt has long envisioned opening a bakery that would bring artisanal pastries and bread to the larger mountain community, and we couldn’t be more excited to make that happen with him.”

Threefold will be located at 100 North Main Street in Breckenridge and will be open from 7 a.m. to 3 p.m. daily when it opens in December. For more information, visit threefoldbreck.com.
