In 2022, husband-and-wife team Christopher and Ariana Teigland opened Glo Noodle House in West Highland, a concept that earned a Michelin Bib Gourmand the following year. Now, the couple is adding a second eatery, sushi spot Odd Rabbit, set to debut in Boulder this spring.
“We have had opportunities to expand in Denver, but nothing ever felt quite right. We never wanted to force the next step,” Ariana says in an announcement of the upcoming addition. “This opportunity actually came from one of our regular guests at Glo. He asked if we’d ever considered Boulder, and the moment we saw his space, we could feel the potential.”
The move to Boulder is fitting, as the Teiglands originally met while working at Blackbelly Market & Restaurant, which is located just two blocks from the future home of Odd Rabbit, at 5845 Arapahoe Avenue. “Bringing our story back to the city where we met feels incredibly natural, and we’re honored to soon be a part of Boulder’s incredible restaurant scene as we create something new for the community,” Ariana notes.
Odd Rabbit will service a “traditionally non-traditional ” take on sushi, including nigiri, handrolls and specialties such as salmon sashimi and tuna tataki. Leading the kitchen will be chef Stephen Nguyen, who brings a solid resume that includes stints at Temaki Den (one of the Top 50 Restaurants in Denver right now) and Uncle, where he launched that concept’s sushi program.

The menu will include noodle dishes such as tori paitan ramen (made with a white chicken broth) and duck mazemen, as well as plates like miso mussels, Szechuan fried snapper, braised pork shoulder and wagyu steak.
The beverage program will be centered on sake and will include flights, offering diners the chance to dive deeper into the fermented rice-based spirit.
“Food has always been how I make sense of the world,” says Christopher, who is both the co-owner and executive chef of Glo Noodle House. “With Odd Rabbit, I wanted to slow things down and really focus on the beauty of simplicity. Great fish, well-seasoned rice, clean cuts, while still allowing room for creativity and play. Sushi is incredibly precise, but it’s also deeply emotional when it’s done right. Our goal is to create food that feels thoughtful and intentional, but also warm, inviting and a little unexpected.”
The space, which is just under 3,500 square feet inside with a 1,500 square-foot patio, is being designed by Arrow B Architecture and will include a ten-seat chef’s counter.
