New Restaurant Coming to Former Fruition Space This Spring

It comes from a familiar name in the scene.

Almost exactly a year ago, we reported that Fruition, the beloved neighborhood restaurant from chef Alex Seidel, would be closing in January 2025 after an eighteen-year run at 1313 East Sixth Avenue.

The space has sat empty ever since, but in 2026, the doors will open once again when chef Quincy Cherrett debuts his first brick-and-mortar, Madeline, in the space this spring.

Cherrett, the son of a hotelier and a graduate of the Culinary Institute of America in New York, is a familiar name in the scene. He worked as chef de cuisine at the now-closed Colt & Gray as well Death & Co. before becoming the executive chef at Izakaya Den and Sushi Den. Later, he launched 22 Provisions as a food truck before moving it into a stall at Avanti, where he most recently operated the bistro-style stall Eloise (which is unrelated to the new Eloise on Tennyson Street).

Like Fruition, Madeline will be designed as a spot that’s equally suitable for special occasions and casual weeknight dinners. Technique-driven, seasonal cooking will star in both rotating plates and signature dishes, like seasonal housemade pastas and seared halibut with fresh green curry. The beverage program will feature an extensive, by-the-glass wine list and ingredient-driven cocktails.

Madeline is named for Cherrett’s newborn niece, “a deeply personal connection that reflects the project’s family-centered spirit,” notes an announcement about the new eatery.

This news is the latest announcement in a series that has us hungry for new dining adventures in 2026. Between Madeline and spots like Casa Juani in Boulder (a Spanish concept from a pair of Frasca alums that landed on Bon Appétit’s most anticipated openings list this week) and Mar Bella Boqueria in Cherry Creek (another Spanish concept, this one from Michelin-starred couple Johnny and Kasie Curiel), the new year is shaping up to be a tasty one.
