There were plenty of Japanese eateries in the news this week, starting with Monday’s opening of Bamboo Sushi, serving certified-sustainable seafood inside Avanti Food & Beverage. For Chef and Tell, Gretchen Kurtz tracked down the globetrotting Nobu Matsuhisa to talk about his newest Matsuhisa restaurant in Cherry Creek as well as highlights from his career as an innovator in Japanese and Peruvian cuisine.
And Mark Antonation visited three Japanese restaurants — Ototo, Cherry Hills Sushi Co. and Sushi Ronin — to see how they help guide customers toward top-notch sake and food pairings.
