No. 23: The Emma Farms Wagyu Burger at Edge Restaurant & Bar
Edge Restaurant & Bar is located in the Four Seasons Hotel downtown, where tourists and businessmen converge on Denver from all over the globe — but the beef that makes up the scrumptious house burger only travels about three hours from the picturesque Emma Farms in Walden. In contrast to yesterday’s downscale but delicious burger from Bob’s Atomic Burger in Golden, this well-heeled beauty fits in perfectly in its swank hotel setting.
“I came up with this burger after tasting the delicious Emma Farms Wagyu for the first time,” says Edge’s chef Simon Purvis. “The meat is so rich and flavorful that it needed ingredients to cut through the fattiness that comes with the natural make-up of the Wagyu.”
So what did the world-traveling Englishman do to this $17 menu item? He used salty pancetta to give a mouth-watering salinity to the dish; added jalapeños to give it a kick of spice and acidity; then topped the whole thing with fresh tomato, housemade pickle relish and a melty white cheddar to round it out. Finally, the bun: “We spread the freshly toasted bun with truffle aioli,” he says. “If it were a cake, that would be the icing.”
Make it even more of a production by adding the “over the Edge” treatment, a $33 supplement that includes seared foie gras, black truffle, caramelized onion and a fried egg. If that’s too much, simply add more heat to your burger and crispy fries by asking for a side of Salomon’s Sauce (named for one of the owners), a fiery blend of sliced jalapenos marinated in lime, sea salt, pepper and olive oil.
The Wagyu burger isn’t on the dinner menu, so head to this upscale steakhouse between 11 a.m. and 2 p.m. for a mid-day power meal. Some say it’s just lunch; we say a it’s a hamburger masterpiece.
