No. 27: The Papa Bear at Cub’s Q Barbeque 
   The Cub’s barbecue truck has made a semi-permanent home for itself in a parking lot at the corner of South Broadway and Dakota Avenue, where mornings bring the sweet smell of wood smoke to the neighborhood and lunchtime brings piles of glistening pork and beef. Kansas City longtimers Greg and Linda McCubbin keep things simple, offering brisket, ribs, pulled pork and smoked Gold Star sausage — all with sauce on the side, natch.
Getting creative at Cub’s doesn’t mean there’s something weird in the smoker; it just means loading up a sandwich with more than one meat: The Papa Bear packs toothsome strands of pork shoulder and tender slices of brisket onto a brioche bun. And while cheese and barbecue don’t often marry well, a slice of smoked provolone in this case adds just the right touch of funk while binding the sandwich together and upping the smoke factor another notch.
The McCubbins keep the smokiness in the meats at a moderate level and cook low and slow so that the end result is some of the juiciest brisket around — and the pulled pork is just as succulent. A squirt or two of the spicy house sauce on the side for dipping adds just enough molasses sweetness to remind you that this is a KC joint.
Pro tips: Get there early, because Cub’s generally sells out by 2 or 3 p.m.; grab some space at one of the standing tables that the McCubbins put out under the trees in the parking lot to enjoy your sandwich fresh and hot (and so you don’t cause an accident while wolfing down this baby in traffic); and spring for a solo rib or two: Single bones aren’t on the menu, but you can get them for $2.75 each.
