Tony's holiday tasting menu for the event will include plenty of veggie crudités, poached shrimp, braised beef short ribs on white cheddar polenta, and a cheese and charcuterie table with Sottocenere (if truffles are your thing, this cheese should be, too), cranberry-chipotle cheddar and white Stilton with pears and apples, as well as traditional Swiss cheese fondue with artisan bread and sausages. A dessert table with mini Linzer tortes, cherry-bourbon fruitcake, and Stollen should round off the evening nicely, and selected complimentary wines will be served.
