Now, with construction underway and an opening date on the horizon, they reveal that they're building a high-end steakhouse: The Pearl Street Steak Room will open in Boulder in a few months.
As promised, the new eatery will feel hidden and private. Kate Linehan, who also works with the couple at Tahona and their other restaurant, Sushi Tora, says the tiny thirty-seat space will have a parlor-like feel. "We're toeing the line between feeling like someone's parlor and using modern elements to fill out the space," she explains, adding that the spot will also feature a handful of bar seats.
The Steak Room is still putting together the menu; Linehan says the owners are sampling beef from humanely raised cattle from a variety of sources -- but the ever-changing menu will ultimately feature various cuts of steak from different ranches, supplemented by game, and sided with seasonal produce. "Since we're printing the menu daily, it gives the chefs a chance to use something really beautiful if they can get their hands on it," she says.
And everything will be executed in Tahona's kitchen, overseen by Matt Tobin, who's stepping up from a sous chef position at the Mexican restaurant to run the show at the new spot. "We're splitting the kitchen," Linehan explains. "Matt will still oversee prep and direction at Tahona, but he'll be focused on the new steakhouse."
The Pearl Street Steak Room is shooting for a late summer opening.
