Craig Conner, proprietor of Pablo's on 6th, has a theory regarding the meaning of life: "Each consecutive moment represents a much smaller part of your life. If each moment passes more quickly, you should seek greater meaning; your actions should have a thoughtful purpose." Conner put his theory into practice in 1995 when he and a partner opened the original Pablo's coffee shop in the Denver Performing Arts Complex. When the national tour of Sunset Boulevard debuted at the complex, the success of that show translated into success at the coffee shop. After amicably buying out his partner in 1997, Conner wanted to develop an even closer relationship with his customers and his community. He envisioned a shop where he could "take over the process from green to brew," buying fresh beans and roasting them in-house to control the entire process of creation and ensure the quality of his coffee. He spent three more years shopping for the perfect roaster, and when he found it, he opened Pablo's on 6th (630 East Sixth Avenue), which he calls an "urban oasis."
