Rayme Rossello began her career with Proto's Pizza, then rolled out the Comida food truck in 2010, touring around Boulder County. Her food gained such street cred that she opened a a brick-and-mortar restaurant in Longmont in 2012 (now closed), then in the Source marketplace in 2013 (closed in 2019). Her third outpost brought Comida's famed food to Aurora, and tacos remain the real draw at Comida; they’re stuffed with fresh, seasonal ingredients, like orange jalapeño slaw and sweet-potato hash, that put a modern spin on the handheld classic.
