La Forêt, which opened in March 2024 inside the former home of iconic Denver spot Beatrice & Woodsley, honors the previous tenant in a way that's part homage and part fresh start — and 100 percent gorgeous. The ceiling-high aspen trees that were such a centerpiece of Beatrice & Woodsley's decor remain, but the menu now offers up French fare (or "alpine forage rustic," as La Forêt's owners describe it). Dishes include stag au poivre (featuring elk backstrap); whole bone-in rabbit leg with vadouvan curry-spiced sauce; a veal stock-based French onion soup; and decadent pomme purée swimming in butter.
