Tocabe: An American Indian Eatery

Tocabe is the brainchild of Ben Jacobs, a member of the Osage tribe who's lived here since he was a kid, went into the restaurant biz at fifteen and still managed college (majoring in history and Native American studies). Then he spotted a hole in Denver's tattered skein of ethnic and international cuisines and went after it with his whole heart, collecting recipes from his past to fit a fast-casual Native American concept. It was a great idea, and Tocabe is a great spot, serving up inexpensive meals that start with one of the true culinary breakthroughs of the New World: fry bread.
