Over the past six years, The Kitchen, 1039 Pearl Street in Boulder, has amassed a following of diners who come to the chic, airy space for dishes that pay homage to the farms the ingredients come from, with a menu of simple American offerings. A year after the restaurant opened its doors, owners Kimbal Musk and Hugo Matheson remodeled the bookstore that was once located directly above it and introduced The Kitchen [Upstairs], a sexy, lounge-like space that lures in Boulder's young professionals for glasses of wine at low tables in good lighting.

Now, with those spots continuing to see nightly crowds, a third space is in the works. Matheson and Musk have a contract for the address next door, at 1035 Pearl Street, which once hosted Seven Eurobar and then Abo's Circle Bar. In those dark digs, they'll open The Kitchen Café in spring 2011.

"It'll be a modern-day pub," says Musk. "We want to create a public space for sharing food and drink with friends that upholds the Kitchen's philosophy on food but expands the community by offering a more price-accessible menu."

Musk won't share the details of that menu, but says offerings will be in line with typical pub fare.

The partners are also working on some interesting and affordable wine and beer options, but as their liquor-license plans have not yet been approved by the city, they won't specify what those might be, either. "We'll share details once they're approved," says Musk. And we'll post updates here at Café Society when we have them.

We do know, though, that just like the traditional pub model in England, the Kitchen Café will only be open until 11 p.m.
