Outside Pizza and Cerebral Brewing Team Up for New Taproom

It's coming to the West Highland neighborhood, and fans can get a sneak peek this month.

Five months after officially opening its second location on East Colfax Avenue in Aurora, Denver brewery powerhouse Cerebral has revealed another upcoming expansion — and it has a delicious new partner.

The brewery has teamed up with Outside Pizza, our 2024 Best of Denver pick for Best Pizza on Wheels, for a new location set to open in the spring of 2025 at 3257 Lowell Boulevard in the West Highland neighborhood.

Outside Pizza has been serving its sourdough Neapolitan-style pies from a retro camper since 2021; this new endeavor will be the first permanent indoor setup for owners Ashley and Ryan Grillaert. “Partnering with Cerebral Brewing is an absolute honor," Ashley says in a release announcing the news. "We’ve been working with them since we started our business, so seeing this partnership come to fruition is amazing. We’re so jazzed to be part of this milestone and look forward to slinging our pizzas to the West Highlands community!”

Shots like this eventually led to a full-fledged business for the owners of Outside Pizza.

The 4,000-square-foot space will also include a large taproom, mezzanine area and patio. Fans can get a sneak peek at the upcoming location during a pop-up taproom experience that is part of Cerebral's three-week celebration of its ninth anniversary. It will include a curated food menu from Outside Pizza, available from 11 a.m. to 10 p.m. on Friday, November 22, and Saturday, November 23, as well as 11 a.m. to 9 p.m. on Sunday, November 24.

“Celebrating nine years is a significant milestone for us,” says Cerebral co-founder Sean Buchan. "We’re excited to cap off our anniversary celebrations by announcing our new West Highlands taproom and hosting a weekend-long event to preview what we have in store for the community. We’ve been huge fans of Outside Pizza for years and can’t wait to showcase their pizza in this beautiful space. We’re eager to share this moment with all of you before we bring our full vision to life next spring.”
