Procession Coffee, which was Westword's Best of Denver Readers' Choice pick for Best New Coffeehouse last year, has been operating out of a food hall stall in Zeppelin Station since November 2022. In June, Procession's stall at Zeppelin Station got a facelift, but it was one of just four remaining businesses operating out of the food hall.
Now it's moved into a new home. November 30 marked Procession's first day at 1075 Park Avenue, which formerly housed Jubilee Roasting Co.
"It's exciting to have a spot that’s all our own — it's all we’ve ever wanted," says Joshua Bosarge, who co-owns Procession with longtime friend Stephen Ashley.
Jubilee was founded in Aurora and opened its second location in the Asterisk building on Park Avenue in January 2020. But recently, Jubilee founder and owner Peter Wanberg sold his shares of the company to several longtime customers, who ultimately decided to keep the original Aurora location and close the Curtis Park spot. For Bosarge and Ashley, the opportunity for a turnkey coffee shop just a mile and a half from their RiNo spot was almost too good to be true.
The cozy cafe, which is about 550 square feet, is a place Bosarge and Ashley fell for before they ever even opened Procession. "Three days after we moved to Denver, we went to Jubilee to sign the LLC for the business, and I thought, 'I’d love to have a space like this — it's small, intimate and bright, and a little bit of a more rough tone because it has exposed brick and things like that,'" recalls Bosarge.
Now that Procession has moved in, "We're gonna make it a little more our vibe and our attitude, our artwork, our design, our music — it's a representation of us," says Bosarge. The natural brick and wood tones of the building have been accented with dark blues and greens, with lots of chrome and plants for a more postmodern/mid-century aesthetic.
"I’m outfitting the furniture a little differently, with tables that can move around for easy flow throughout the space. The coffee program will be a little bit more focused on the sit-down experience," Bosarge says.
Procession has also dialed in its drip coffee and is now offering pour-overs for a more elevated coffee program compared to what it had at Zeppelin. "Stephen is becoming a national barista who can compete in competitions, so we want to showcase his skills and build it in a bit more," Bosarge notes.
Since it won't be sharing space with other food vendors anymore, Procession plans to bring in some grab-and-go food options, including pastries from Sweet Anarchy Bakery.
"We are going to be doing a lot more collaborations — lots more music and fashion brand collaborations," says Bosarge. "We’re so central. That intersection is such a crucial intersection of the city — right next to the 'Love This City' mural — and so I can't think of a better place to do flagship Denver collabs."
Plus, Procession will continue to host coffee-centric events, like the Latte Art Throwdown fundraiser it held in June.
Procession opened almost one month to the day after Jubilee closed in the space, so no grand festivities are scheduled yet, but you can expect some fun things to pop up — after all, this is the coffee shop that offers free drip for life if you get its logo tattooed on your person.
