The subs at Snarf's have been winning fans since the very first shop opened in Boulder in 1996. And soon, the homegrown chain will give diners even more reason to snarf Snarf's: Snarf Burger will be opening this spring at 2000 Arapahoe in Boulder, in the space vacated by Daddy Bruce's Bar-B-Que in March 2012. And burgers won't be the only innovation here -- there will also be fried bologna sandwiches and deep-fried hot dogs with bacon.
Today Snarf's has sixteen locations and plans for massive growth between now and 2018: fifty new stores in and outside of Colorado. Founder Jim Seidel owns all the current locations except two in St. Louis, which are owned by his sister and her husband, Jodi and Maty Aronson.
Two or three of the new stores will be in Boulder County, and a second Snarf Burger location is also in the works for Boulder. You really gotta love homegrown, ambitious projects...and fried bologna sandwiches.
