This is the third outpost of the Atomic Cowboy concept, opened in August 2015. Two food purveyors inhabit the bar: From early in the morning into the afternoon, the Denver Biscuit Company cranks out biscuit sandwiches and platters for the local workforce; starting at lunch, Fat Sully's bakes greasy, huge pizza slices and pies for dine-in, takeout or delivery, and continues serving until the wee hours. As for the Cowboy itself, the cavernous joint comes fully stocked with a bi-level bar that features a daily happy hour (as well as daily specials) and board games.
