No. 12: Tallow Candle at Il Posto
Here’s a fun thing to do next time you’re at Il Posto: Order the tallow candle, and once it’s delivered, watch as tables around you follow suit. What looks like a table centerpiece melts down slowly, forming an edible pool of seasoned beef fat through which you drag a little bread. It’s not just a neat party trick, though: The candle is rendered with herbs like rosemary, thyme and oregano, which makes that pool, sown liberally with flaked salt, verdant and buoyant. The result is as addictive and delicious as hot butter or bone marrow, or a refined combination of the two.
Novelty or no, we order it every time we sit down to dinner in this RiNo restaurant; it’s an impressive way to pump up your bread service with a little dramatic flare.
