You don’t need to venture down I-70 to sip its spirits, especially with the recent debut of Après at Govnr’s Park, a new beverage hall in Capitol Hill. But in addition to mountain views, Breckenridge Distillery offers a behind-the-scenes look at its original production facility. Take a public tour to taste its vodka, gin and signature bourbon whiskey, then sample more award-winning booze in the form of craft cocktails. Its restaurant location on Airport Road also serves globally-inspired small plates and entrees, which pair perfectly with a flight on its patio.

Quandary Peak

Wild adventures happen on Colorado fourteeners, including Quandary Peak. However, among mountains of the same ranking, this 14,271-foot summit is considered one of the more mild ascents and great for first-timers. Hike the Class 1 east ridge for the least difficulty, or challenge yourself with an exposed scramble up the west side. Note that there is little to no cell service at the trailhead, so be sure to book your parking permit in advance, as such is required from 5 a.m. to 3 p.m. between June 14 and September 14. Pricing is $30 on Mondays through Thursdays and $55 on Fridays through Sundays, as well as holidays.

Chef Matt Vawter, who was named "Best Chef: Mountain Region" by last year’s James Beard Awards, founded modern American restaurant Rootstalk in 2020. Set within a historic home on North Main Street, this esteemed dining destination is loved for its $149 seasonal seven-course tasting menu starring dry-aged New York strip from Brunson Family Meat Co., agnolotti filled with baby artichoke and foraged morel mushrooms, plus optional sommelier-selected wine pairings. An à la carte dinner menu is also available daily. Rootstalk is a lovely place to celebrate a special occasion, as is its neighboring Italian sister concept, Radicato.
