Après at Govnr’s Park Brings a Post-Skiing Theme to Former Pancho Poncho

New beverage hall pours ski-town brews, craft cocktails and wine, with Pancho Poncho faves and nods to the old Gov's Park

For more than forty years, a Logan Street watering hole bore the name Govnr's Park Restaurant and Tavern. Beloved by old hands and newcomers alike (Westword held its first birthday party there), the fern bar drew sports-loving crowds who came for the big screens, the big beers — 23 ounces, half-price at happy hour — and the noisy neighborhood ambiance. That era ended in 2018, when the property became the third location of Carboy Winery, complete with tasting room.

When the Carboy crew added the adjacent dry-cleaners spot on the corner at Seventh Avenue, it transformed the original restaurant space into the Mediterranean-inspired Logan Street.

In spite of a well-executed menu and banging happy hour, Logan Street never really found its footing — the pandemic didn't help — and switched over to Mexican concept Pancho Poncho in 2024. Now, less than a year later, the ownership group is attempting a second rebrand in the 11,000 square-foot space: Après at Govnr’s Park. The menu includes some ski-town suds, Pancho favorites...and original Gov's Park menu items.

"You can't recreate Gov's Park, because it was so iconic," says Carboy Winery CEO Kevin Webber. "But we revived the old color scheme of the green and the font of the old Gov's Park. We're adding other things that people probably remember from Gov's, like the giant pretzel [which comes with grilled kielbasa and cheddar sauce] and doing a really great burger for $13, things like that. And we're keeping the greatest hits from Pancho Poncho's, including tacos, nachos, quesadillas and loaded fries." New items include a mushroom banh mi, short rib French dip sandwich, and bowls with crispy rice, tuna or salmon, avocado and seaweed salad.

The beverage side of the menu includes brews from two ski-town favorites — Steamboat Springs' Storm Peak Brewery and Summit County's Broken Compass — along with offerings from Breckenridge Distillery. Table service is gone at what the staff describe as "the campus"; guests will order at one of the two bars, and then food will be delivered to tables.

The interior of Après is pure "up the hill" ambiance, minus the Interstate 70 traffic — not to mention the cost of a lift ticket or season pass to the ski resort of your choice. There's no shot wheel (yet?) but the feel is pure 4 p.m. at the base of the slopes, complete with shot skis, old chairlifts, trail maps, a wall made from old skis and plenty of big screens to catch the game. "It's really a complete immersion into mountain après culture," says Webber. "And with partnering with our friends at Breckenridge Distillery and Broken Compass and Storm Peak, we can really celebrate Colorado craft beverage and après and bring it back down here."

Pours of Carboy Wines are also on tap. Founded in 2016 and initially a négociant (a business model that makes wine from grapes purchased from other vineyards rather than harvesting their own), Carboy now has its own acreage planted in Colorado's Grand Valley and Washington's Horse Heaven Hills AVAs. The group also operates Angelo's Taverna (the original on East Sixth Avenue and one connected to another Carboy's in Littleton), and Breckenridge's historic Gold Pan Saloon.

While Carboy is bringing back the Govnr's Park name at Après at Govnr's Park, some things have changed: The govnrspark.com domain is now an Indonesian online gambling site.

Although the  Après at Govnr's Park opening doesn't officially start until May 12, with a grand opening scheduled for June 7, the revamped space will open its doors today.
