No. 4: Foie Gras Mousse at Charcoal Bistro 
  Duck in to Charcoal Bistro on Old South Gaylord and you’ll find a completely different atmosphere from that of its older sibling, Charcoal, in the Golden Triangle. While Charcoal is sleek, sophisticated and worldly, Charcoal Bistro is bright and casual while still maintaining a little polish. Every neighborhood needs a neighborhood bar that fits the personality of its surroundings, and this bistro, which opened last October, fits right in as an apt Washington Park addition.
The foie gras mousse, on the “Previews” section of the menu (the building was once a theater, hence the movie-themed menu), is a good example of Charcoal’s casual elegance. A random array of wine-poached pear circles dot a plate alongside a fan of toasted brioche and an ingot of mousse, whipped with cream but still dense enough to maintain the duck-liver-butter texture that makes foie gras so luxurious. The sweetness of the pears in winter-spiced sauce is countered by the bitterness of mixed microgreens – often an afterthought on modern platings, but here doing a little work to round out the dish. A mystery ingredient on the plate, in the form of several small piles of cream-colored powder, turned out to be dehydrated and pulverized parsnip, adding another layer of bitter, earthy flavor.
Foie gras is a rare indulgence, a special treat that’s often followed by a hefty bill. Charcoal Bistro’s duck-liver appetizer comes in at $16, which seems in keeping with the Washington Park neighborhood itself: pricey but worth an occasional visit for its classic beauty.
