No. 1: Ricotta Gnudi at 12@MADISON
  Five simple spheres in a pool of brown butter, a dish that captures the spare beauty of 12@MADISON. There’s no room for error, no flash or style to hide behind. Two ingredients, cheese and butter, convey everything important about chef/owner Jeff Osaka’s Congress Park eatery, which just won our award for Best New Restaurant in Denver.
The remaining ingredients can be counted on one hand. These gnudi aren’t quite nude; chef de cuisine Ashley McBrady explains that the ricotta balls are formed and then rolled in semolina. An overnight rest bonds the flour to the cheese, creating an ultra-thin and delicate jacket around the gnudi when they are poached. Beyond that, there’s a whisper of nutmeg in the ricotta, a few leaves of sage sizzled in the butter, and a sprinkle of salt and pepper. Shavings of locally made cacio pecora (an aged sheep’s-milk cheese) cling to the spheres, adding to the nutty aroma that rises from the bowl.
Over the past year, we’ve been overcome by towering sandwiches, impressed by elaborate creations and delighted by exotic ingredients.But this singular dish puts an emphatic period at the end of this edition of our 100 Favorite Dishes.
